Vegan Roasted Carrots with Parme-Sans
These roasted carrots are so incredibly easy to make, and such a tasty way to get a veggie in. Opt for a bunch of carrots in different colors to make this shine on the dinner table.
Ingredients
- One bunch of carrots 
- 3 tbsp vegetable oil 
- 1.5 tsp salt 
- 1 tsp dried sage 
- 2 tbsp Parme-Sans Cheese 
- Pepper to taste 
Directions
- Preheat the oven to 200C 
- Chop carrots into one inch slices 
- Mix oil, salt, sage, and pepper together in a separate dish 
- Place carrots in a dish with raised sides, so as not to let the oil mixture spill over 
- Pour the oil mixture over the carrots and mix together, coating evenly 
- Sprinkle the Parme-Sans over the carrots 
- Bake for 30 to 40 minutes, until the carrots are soft 
- Serve warm and enjoy!
